Ingredients
  

  • 1.5 pounds lean ground turkey
  • 2 large sweet potatoes peeled and diced small
  • 1 whole yellow onion diced
  • 1 whole red bell pepper chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 0.5 cup low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9x13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sauté the diced sweet potatoes for 8 minutes until slightly softened and browned on the edges.
  4. Stir in the diced onion and red bell pepper, cooking for 4 more minutes.
  5. Add the ground turkey, breaking it apart, and cook until fully browned. Drain any excess liquid.
  6. Mix in the minced garlic, cumin, smoked paprika, salt, and black pepper, cooking for 1 minute.
  7. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  8. Transfer the mixture to the prepared baking dish and spread evenly.
  9. Bake uncovered for 20 to 25 minutes until the sweet potatoes are fork-tender.

Notes

  • Cut the sweet potatoes into uniform, half-inch cubes so they finish cooking at the same time as the meat.
  • If the casserole looks dry before baking, add two extra tablespoons of chicken broth to the dish.
